Pile o' (Banana) Pancakes

Here is another one of our favorite, from scratch, recipes. When I make these I double the recipe and freeze a lot of them. When you are ready to eat them just put them in the toaster and breakfast is ready shortly thereafter. As usual, I substitute 1/2 the regular flour for whole wheat flour. I also add a little vanilla to the mix. I have been making these for years and I am never consistant with the amount of banana I add. One banana, two bananas, three bananas... I just use whatever I have that needs using. Another piece of advice - cook over a low temperature really slowly. Otherwise the outside cooks too fast and you are left with mush on the inside.
